Preheat your oven to 375Β°F (190Β°C).
Rinse the trout inside and out under cold water and pat dry with a paper towel.
Season the inside of each trout with a light sprinkle of salt and pepper.
Slice one lemon thinly and insert 2-3 slices into the cavity of each trout along with 1 sprig of fresh rosemary and 1 sliced clove of garlic.
Lightly drizzle olive oil over the outside of each trout and rub to coat evenly.
Wrap each trout with 4 strips of bacon, overlapping slightly to cover the fish. Secure the bacon strips with toothpicks if needed.
Place the bacon-wrapped trout on a lined baking sheet or in a roasting dish.
Roast in the preheated oven for 20-25 minutes, or until the bacon is crisp and the trout is cooked through (internal temperature should reach 145Β°F or 63Β°C).
While the trout is cooking, cut the second lemon into wedges for serving.
Remove the trout from the oven and allow to rest for 2-3 minutes before serving.
Serve the bacon-wrapped trout with lemon wedges on the side. Enjoy!
