πŸ“ Instructions

10 steps
1

Wash the basmati rice thoroughly under running water until the water runs clear. Drain and let it sit for a few minutes to dry.

2

In a pot, bring 1 cup of water to a boil. Add the washed rice and reduce the heat to low. Cover the pot and cook the rice until it is soft and all the water is absorbed, about 10 minutes.

3

Meanwhile, heat ghee in a small pan over medium heat. Add the cashew nuts and fry them until they are golden brown. Remove them with a slotted spoon and set aside. In the same ghee, fry the raisins until they puff up, then remove and set aside with the cashews.

4

In another large pot, bring the milk to a gentle boil over medium heat, stirring occasionally to prevent the milk from sticking to the bottom.

5

Once the rice is cooked, add it to the boiling milk. Stir well to combine.

6

Let the mixture simmer on low heat, stirring continuously, until the rice is fully cooked and the milk starts to thicken, approximately 15 minutes.

7

Add sugar to the rice-milk mixture and stir until it dissolves completely.

8

Add cardamom powder and saffron strands, and continue to cook for another 5 minutes, allowing the flavors to meld and the mixture to thicken further.

9

Turn off the heat and top the payasam with the fried cashew nuts and raisins.

10

Serve the payasam warm or chilled as per your preference.
