Peel the potatoes and slice them thinly, approximately 1/8 inch thick.
Peel and finely slice the onion as well.
In a large frying pan, heat the olive oil over medium heat.
Add the sliced potatoes and onion to the pan, and sprinkle with salt. Stir to coat them evenly with oil.
Cook, stirring occasionally, until the potatoes are tender but not brown, about 15-20 minutes.
Meanwhile, crack the eggs into a large bowl and whisk them together with a pinch of salt and black pepper until well beaten.
