Bring a large pot of salted water to a boil and cook the tortellini according to package instructions. Reserve 1/2 cup of pasta water, then drain and set aside.

In a large skillet over medium heat, add 1 tablespoon of olive oil. Add the Italian sausage and cook, breaking it into crumbles, until browned and cooked through, about 5-7 minutes. Remove the sausage from the skillet and set aside.
