Wash and scrub the oranges, lemons, and grapefruit thoroughly to remove any wax or residue.

Using a sharp knife or vegetable peeler, remove the zest of all the fruits, being careful to avoid the bitter white pith underneath. Slice the zest into thin strips and set aside.

Peel off the remaining white pith from the fruits and discard it. Chop the fruit flesh into small pieces, removing any seeds, and place them in a large pot.

Add the sliced zest, granulated sugar, and water to the pot with the chopped fruit. Stir well to combine.

Place the pot over medium heat and bring the mixture to a boil, stirring occasionally to dissolve the sugar.

Lower the heat to a steady simmer and cook the mixture for 1.5 to 2 hours, stirring occasionally, until the liquid thickens and reaches the desired marmalade consistency. To check if it’s ready, place a small amount on a cold plate. If it wrinkles slightly when pushed with your finger, it’s done.
