πŸ“ Instructions

11 steps
1

Place each chicken cutlet between two sheets of plastic wrap or parchment paper, and pound to an even thickness of about 1/4 inch using a meat mallet.

2

Season both sides of the chicken cutlets with salt and pepper.

3

Place two sage leaves on top of each piece of chicken, then wrap each cutlet with a slice of prosciutto. Press lightly to make sure the prosciutto adheres to the chicken.

4

Dredge the chicken lightly in flour, shaking off any excess.

5

In a large skillet, heat the olive oil over medium heat.

6

Add the chicken cutlets to the skillet, prosciutto-side down. Cook for 2-3 minutes per side, or until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside on a plate.

7

In the same skillet, melt the butter over medium heat, scraping up any browned bits from the bottom of the pan.

8

Pour in the white wine, and let it simmer for 2-3 minutes until reduced by half.

9

Add the chicken broth and lemon juice to the skillet, and simmer for another 2-3 minutes until the sauce thickens slightly.

10

Return the chicken to the skillet, spooning the sauce over each piece to coat. Let it warm through for about 2 minutes.

11

Transfer the chicken to serving plates and spoon the remaining sauce over each cutlet. Serve immediately.
