📝 Instructions

10 steps
1

In a large mixing bowl, combine the plain flour, cold butter, and lard. Use your fingertips to rub the fats into the flour until the mixture resembles breadcrumbs.

2

Gradually add cold water, a tablespoon at a time, and mix until the dough comes together. Form the dough into a ball, wrap in cling film, and chill in the fridge for 30 minutes.

3

While the pastry chills, prepare the filling. In a large bowl, mix the diced beef skirt, potato, swede, and onion. Season with salt and black pepper, ensuring everything is evenly coated.

4

Preheat the oven to 200°C (180°C fan)/400°F/gas mark 6. Line a baking tray with parchment paper.

5

On a lightly floured surface, divide the dough into four equal portions. Roll each portion out into a circle approximately 20cm in diameter.

6

Place an equal amount of the filling mixture in the center of each pastry circle, leaving a 2cm border around the edges.

7

Fold each pastry circle in half to encase the filling, creating a semi-circular shape. Pinch and crimp the edges to seal tightly.

8

Transfer the pasties to the prepared baking tray. Brush the tops with beaten egg to give them a golden finish during baking.

9

Bake in the preheated oven for 45-50 minutes, or until the pastry is golden brown and the filling is steaming hot.

10

Remove from the oven and allow to cool slightly before serving. Enjoy warm or cold!
