In a skillet over medium heat, heat the olive oil and sauté the chopped onion until soft and translucent, about 3-4 minutes. Add minced garlic and cook for 1 minute longer.

Spread a thin layer of sauce onto the bottom of a large baking dish. Pour the rigatoni mixture into the dish and spread it out evenly. Top with the remaining sauce, then sprinkle the rest of the mozzarella and the grated Parmesan cheese over the top.
