Delightfully zesty and melt-in-your-mouth tender, Sweetheart Lime Shortbread Cookies are the perfect blend of tangy lime and buttery goodness, all wrapped up in a charming, heart-shaped treat. Crafted with fresh lime zest and juice, these cookies deliver a vibrant citrus flavor that is beautifully balanced by a sprinkle of sugar for a touch of sparkle and sweetness. Ideal for special occasions like Valentine’s Day or simply as a thoughtful homemade gift, this recipe is surprisingly simple to make with just a few pantry staples. The dough comes together effortlessly, and the soft, delicate texture is achieved through the addition of cornstarch. Each bite is a heavenly combination of crisp edges and a buttery, melt-in-your-mouth center. Bake up a batch of these elegant cookies and let the love—and lime—shine through!
Preheat your oven to 160°C (325°F) and line two baking sheets with parchment paper.
In a large mixing bowl, cream together the unsalted butter and powdered sugar using an electric mixer on medium speed until light and fluffy, about 2 minutes.
Add the lime zest, lime juice, and vanilla extract to the mixture. Mix until well combined.
In a separate bowl, whisk together the all-purpose flour, cornstarch, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing on low speed until the dough comes together. Be careful not to overmix.
Turn the dough out onto a lightly floured surface, and gently knead it into a smooth ball.
Roll the dough to a thickness of about 6mm (1/4 inch). Use a heart-shaped cookie cutter to cut out cookies and arrange them on the prepared baking sheets, leaving about 2cm (1 inch) of space between each cookie.
Gather and re-roll the scraps of dough to cut out more cookies until all the dough is used.
Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are just lightly golden. Be careful not to overbake.
Remove the cookies from the oven, let them cool on the baking sheets for 5 minutes, then transfer them to a wire rack to cool completely.
While the cookies are still slightly warm, sprinkle the tops with granulated sugar for a sparkling finish.
Once cool, store the cookies in an airtight container for up to 1 week. Serve and enjoy!
