Bring a large pot of salted water to a boil. Carefully remove 10-12 large outer leaves from the head of cabbage. Blanch the leaves in the boiling water for 2-3 minutes until they are pliable. Remove and set aside to cool.

Using a sharp knife, pare down the thick vein on each cabbage leaf to make it easier to roll.

In a large mixing bowl, combine the ground beef, ground pork, cooked rice, onion, garlic, egg, paprika, salt, black pepper, and parsley. Mix until evenly combined.

Lay a cabbage leaf flat and place about 1/4 cup of the filling mixture at the base of the leaf. Roll the leaf tightly, folding in the sides as you go, to create a neat roll. Repeat with the remaining leaves and filling.

In a large, deep skillet or Dutch oven, heat the olive oil over medium heat. Stir in the tomato paste and cook for 1 minute. Add the crushed tomatoes, chicken broth, and brown sugar. Stir well and bring to a simmer.

Nestle the cabbage rolls seam-side down into the sauce. Cover the pot and reduce the heat to low. Simmer for 60 minutes, occasionally spooning some of the sauce over the rolls.

Taste the sauce and adjust seasoning with additional salt and pepper if necessary.
