Cook the lasagna noodles according to the package instructions until al dente. Drain, rinse them with cold water, and lay them flat on a clean kitchen towel or parchment paper to prevent sticking.
In a large mixing bowl, combine the spinach, ricotta cheese, 1 cup of shredded mozzarella, grated Parmesan, egg, minced garlic, Italian seasoning, salt, and pepper. Mix until well combined.
