πŸ“ Instructions

7 steps
1

Remove the giblets from inside the chicken and pat the chicken dry with paper towels. Set aside.

2

In a blender, combine the chipotle peppers, adobo sauce, minced garlic, diced onion, cumin, smoked paprika, oregano, salt, black pepper, chicken broth, lime juice, and olive oil. Blend until smooth to create the chipotle marinade.

3

Rub the chipotle marinade all over the chicken, making sure to get under the skin and inside the cavity for maximum flavor.

4

Place the marinated chicken in the Crock Pot, breast side up, and pour any remaining marinade over the top.

5

Cover and cook on low for 6-8 hours or on high for 4 hours, until the chicken is fully cooked and tender. The internal temperature should reach 165Β°F (74Β°C) at the thickest part of the breast or thigh.

6

Carefully remove the chicken from the Crock Pot (it will be very tender and may fall apart). Let it rest for 10 minutes before serving.

7

Optionally, garnish with freshly chopped cilantro before serving. Serve with rice, tortillas, or your favorite sides.
