Preheat the oven to 400Β°F (200Β°C). Line a baking sheet with parchment paper.
Peel the kumara (sweet potatoes) and cut them into 1-inch cubes. Toss the cubes with 2 tablespoons of olive oil, 1 teaspoon of sea salt, and 0.5 teaspoons of black pepper. Spread them evenly on the prepared baking sheet.
Roast the kumara in the oven for 25-30 minutes, or until tender and slightly browned, stirring halfway through.
In the last 10 minutes of roasting, wrap the garlic cloves (with skin on) in aluminum foil and place on the baking sheet with the kumara to roast until softened.

Transfer the kumara dip to a serving bowl and drizzle with a little olive oil. Garnish with fresh parsley.
