Rinse the sushi rice thoroughly under cold water until the water runs clear to remove excess starch.

Combine the rinsed rice and water in a rice cooker and cook according to the manufacturer's instructions. If using a stovetop, bring the rice and water to a boil, then reduce to a simmer, cover, and cook for 18–20 minutes. Let it rest for 10 minutes before fluffing with a fork.
