Bring a large pot of water to a boil. Add 1 tablespoon of salt and the linguini pasta. Cook according to package instructions until al dente, then reserve 1 cup of pasta water before draining. Set the pasta aside.
While the pasta cooks, heat 2 tablespoons of olive oil and 2 tablespoons of butter in a large skillet over medium heat.
Add the minced garlic to the skillet and sauté for 1-2 minutes until fragrant, being careful not to burn it.
Add the shrimp to the skillet. Sprinkle with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Cook for 2-3 minutes on each side, or until the shrimp are pink and cooked through. Remove the shrimp and set aside.
In the same skillet, add the halved cherry tomatoes. Sauté for 3-4 minutes until they begin to soften.
Pour in the heavy cream and stir well. Let the cream simmer for 2-3 minutes to slightly thicken.
Gradually add the shredded mozzarella cheese, stirring constantly to melt it into the sauce. Once melted, stir in the grated Parmesan cheese.
Add the cooked linguini to the skillet, tossing to coat the pasta evenly in the sauce. Use the reserved pasta water, a few tablespoons at a time, to loosen the sauce and reach the desired consistency.
Return the cooked shrimp to the skillet and gently toss to combine.
Season with additional salt, black pepper, and optional red pepper flakes, to taste.
Garnish with fresh parsley and serve immediately.
