Rinse the rhubarb stalks thoroughly and chop them into small pieces (about 1-inch chunks).
In a medium saucepan, combine the chopped rhubarb, water, and granulated sugar.
Place the saucepan over medium heat and bring the mixture to a simmer, stirring occasionally to dissolve the sugar.
Allow the rhubarb mixture to cook for 15-20 minutes, or until the rhubarb is soft and beginning to break down.
Remove the saucepan from the heat and let the mixture cool to room temperature.
