Preheat your oven to 200Β°C (390Β°F).
Slice the black olives in half. Halve the cherry tomatoes as well. Mince the garlic cloves and set aside.
Cut the lemon into thin slices. You will need four slices, one for each fillet.
Lay out the parchment paper sheets on a flat surface. Each sheet should be large enough to fold over and enclose each fillet like a parcel.
In a small bowl, mix the olive oil, white wine, salt, and ground black pepper to create a marinade.
Place one sea bream fillet in the center of each parchment paper sheet. Drizzle each fillet with a portion of the marinade.
Add a sprinkle of minced garlic, a few halved olives, and some cherry tomato halves on and around the fillets.
Place a fresh thyme sprig and a lemon slice on top of each fillet.
Carefully fold the parchment paper over each fillet to create a sealed parcel. Twist or fold the edges tightly and tie with kitchen twine if necessary to ensure the parcels stay closed during baking.
Place the sealed parcels on a baking tray and bake in the preheated oven for 18 minutes.
Remove the parcels from the oven and carefully open them, watching out for hot steam.
Serve the sea bream fillets directly in their parchment paper or transfer them to plates, pouring the juices from the parcels over the fish. Enjoy!
