Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Place the chopped carrots, zucchini, celery, and onion on the baking sheet. Drizzle with 1 tablespoon of olive oil and toss to coat evenly. Roast for 25–30 minutes, stirring halfway through, until the vegetables are tender and slightly caramelized.

While the vegetables are roasting, toast the walnuts and sunflower seeds in a dry skillet over medium heat for 3–4 minutes until golden and fragrant. Set aside to cool.

Once the vegetables are roasted, allow them to cool for 5–10 minutes.

In a food processor, add the roasted vegetables, toasted walnuts and sunflower seeds, nutritional yeast, soy sauce, fresh thyme, parsley, smoked paprika, black pepper, and salt.

Add the minced garlic, 1 tablespoon of olive oil, lemon juice, and water. Process the mixture until smooth and creamy, scraping down the sides of the food processor as needed. Adjust the consistency by adding a little more water if required.

Taste the pâté and adjust the seasoning by adding more salt, pepper, or lemon juice to your preference.

Transfer the pâté to a serving dish or airtight container. Chill in the refrigerator for at least 1 hour to allow the flavors to meld together.
