Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a medium skillet, cook the ground breakfast sausage over medium heat until browned and fully cooked. Drain any excess grease and set aside.
In a small bowl, whisk together 4 eggs, milk, salt, and black pepper.
Pour the egg mixture into a non-stick skillet over medium heat and scramble until just set but still soft. Remove from heat and set aside.
On the prepared baking sheet, roll out one package of crescent roll dough into a large rectangle. Seal any perforations.
Spread half of the cooked sausage down the center of the dough (leaving a 2-3 inch border on either side), followed by half of the scrambled eggs, and then sprinkle half of the shredded cheddar cheese on top.
Using a sharp knife, cut horizontal strips, about 1 inch wide, along the two long edges of the dough. The strips should extend towards the fillings but not touch them.

Repeat the same process with the second package of crescent roll dough and the remaining sausage, eggs, and cheese to form a second braid.
Brush the tops of both braids with melted butter and transfer to the preheated oven.
Bake for 18-20 minutes, or until the dough is golden brown and fully cooked.
