Heat a large skillet over medium heat. Add the Italian sausages and cook for 8-10 minutes, turning occasionally, until browned and cooked through. Remove from the skillet and set aside.
While the sausages cook, thinly slice the red bell pepper, yellow bell pepper, and onion.
In the same skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced bell peppers and onion, stirring occasionally, and cook for 8-10 minutes until softened and slightly caramelized.
