📝 Instructions

10 steps
1

Preheat your oven to 175°C (350°F). Line an 8x8-inch (20x20 cm) baking dish with parchment paper, leaving an overhang for easy removal.

2

In a medium bowl, mix the melted butter, granulated sugar (50 g), all-purpose flour (125 g), and salt (0.25 tsp) until well combined and a dough forms.

3

Press the dough evenly into the bottom of the prepared baking dish to form the crust. Use a flat-bottomed glass to press it down smoothly if needed.

4

Bake the crust in the preheated oven for 15-20 minutes, or until the edges are lightly golden. Remove it from the oven and set aside while you prepare the filling.

5

In a separate bowl, whisk together the grapefruit juice (120 ml), granulated sugar (200 g), eggs (3), all-purpose flour (30 g), and grapefruit zest (1 tbsp) until smooth and fully combined.

6

Pour the filling over the pre-baked crust and smooth it out evenly with a spatula.

7

Bake the bars in the oven for another 25-30 minutes, or until the filling is set and no longer jiggles in the center.

8

Remove the bars from the oven and allow them to cool completely in the pan at room temperature. Then transfer to the refrigerator to chill for at least 2 hours.

9

Once chilled, lift the bars out of the pan using the parchment overhang. Slice into 9 squares.

10

Dust the tops with powdered sugar (15 g) before serving, if desired. Enjoy!
