📝 Instructions

8 steps
1

Bring a large pot of salted water to a boil. Cook the rotini pasta according to package instructions until al dente. Drain and set aside.

2

In a large skillet or sauté pan, heat 1 tablespoon of olive oil over medium heat. Add the Italian sausage and cook for 6-7 minutes, breaking it up into crumbles with a wooden spoon, until browned and fully cooked. Transfer the sausage to a plate and set aside.

3

In the same skillet, add the remaining 1 tablespoon of olive oil. Sauté the onion for 3-4 minutes until softened, then add the minced garlic and cook for an additional 1 minute, stirring frequently.

4

Stir in the crushed tomatoes, chicken broth, oregano, and red pepper flakes. Bring the sauce to a gentle simmer and cook for 5 minutes to allow the flavors to meld.

5

Add the cannellini beans to the sauce and return the cooked sausage to the skillet. Simmer for another 5 minutes, stirring occasionally. Season with salt and black pepper to taste.

6

Mix the cooked rotini pasta into the skillet with the sausage and bean sauce. Toss to combine and heat through for 2-3 minutes.

7

Remove the skillet from heat. Stir in the chopped parsley and half of the grated Parmesan cheese.

8

Serve the pasta immediately, garnished with the remaining Parmesan cheese and additional parsley if desired.
