In a medium saucepan, heat the chicken or vegetable stock over low heat and keep it warm throughout the cooking process.

In a small bowl, combine the saffron strands with 2 tablespoons of the warm stock and let it steep for at least 5 minutes.

Finely dice the shallots and prepare all other ingredients so they are ready to use.

Heat 30g of the butter and 2 tablespoons of olive oil in a large, heavy-bottomed saucepan over medium heat.

Add the Arborio rice to the pan and stir well for 1–2 minutes until coated in the butter and oil mixture and lightly toasted.

Continue adding the stock one ladleful at a time, stirring regularly and allowing each addition to be absorbed before adding the next. This process should take about 20 minutes.

Halfway through the cooking process, stir in the saffron mixture along with its liquid to infuse the risotto with its characteristic color and flavor.

Once the rice is cooked to al dente and the risotto has a creamy consistency, remove the pan from the heat.
