Rinse the fresh raspberries thoroughly and place them in a small saucepan.

Add the granulated sugar and lemon juice to the saucepan. Cook over medium heat for 3–5 minutes, stirring occasionally, until the raspberries break down into a sauce-like consistency.

Remove the saucepan from heat and allow the raspberry mixture to cool slightly.

Once cooled, use a fine mesh sieve to strain the raspberry mixture into a bowl, discarding the seeds. This will leave you with a smooth raspberry puree.
