Bring a large pot of salted water to boil. Cook the penne pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining and set the pasta aside.

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the Italian sausage and cook, breaking it up with a wooden spoon, until browned and fully cooked, about 5-7 minutes. Remove the sausage with a slotted spoon and set aside.
