Transform your breakfast or beverages with this Quick and Easy Cranberry Syrup, a vibrant and versatile recipe that effortlessly balances tart cranberries with the sweetness of sugar and a hint of vanilla. Made with just five simple ingredients—including fresh or frozen cranberries, lemon juice for a zesty pop, and aromatic vanilla extract—this syrup comes together in only 20 minutes. Perfect for drizzling over pancakes, waffles, or yogurt, or as a flavorful addition to cocktails and desserts, this homemade cranberry syrup adds a gourmet twist to any dish. Plus, it’s easy to store in the fridge for up to two weeks, making it a convenient, showstopping treat.
In a medium saucepan, combine the cranberries and water.
Place the saucepan over medium heat and bring the mixture to a boil.
Reduce the heat to low and allow the cranberries to simmer for 10 minutes, or until they burst and soften.
Using a wooden spoon or potato masher, gently mash the cranberries to release their juices.
Stir in the granulated sugar and lemon juice, and continue simmering for an additional 5 minutes, stirring occasionally, until the mixture thickens slightly.
Remove the saucepan from the heat and stir in the vanilla extract.
Strain the mixture through a fine-mesh sieve into a bowl or jar to remove solids, pressing the pulp with the back of a spoon to extract as much syrup as possible.
Allow the syrup to cool to room temperature. Once cooled, transfer the syrup to a sealed container and store it in the refrigerator for up to 2 weeks.
Serve over pancakes, waffles, yogurt, or use it as a topping or cocktail ingredient.
