Clean the portobello mushroom caps by removing the stems and gently wiping the caps with a damp paper towel. Set aside.

Thinly slice the yellow onion.

Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a skillet over medium heat. Once melted and hot, add the sliced onions.

Cook the onions, stirring occasionally, for about 15 minutes until caramelized. Add the balsamic vinegar halfway through cooking and mix well. Remove the onions from the skillet and set aside.

In the same skillet, add the remaining 1 tablespoon of olive oil. Season both sides of the portobello mushroom caps with garlic powder, salt, and black pepper.

Place the mushrooms in the skillet, gill side down first, and cook for 4-5 minutes per side until tender. Remove from the skillet and pat dry with a paper towel if needed to remove excess moisture.

Assemble the sandwiches by placing a slice of Swiss cheese on one slice of rye bread. Add one portobello mushroom cap, half of the caramelized onions, another slice of Swiss cheese, and another slice of rye bread. Repeat for the second sandwich.

Wipe the skillet clean and heat it over medium-low heat. Butter the outside of each sandwich generously.

Place the sandwiches in the skillet and cook for 3-4 minutes per side, pressing lightly with a spatula, until the bread is golden brown and the cheese is melted.
