Season the pork tenderloin with 1 teaspoon each of salt and black pepper.

Heat a large oven-safe skillet over medium-high heat and add 2 tablespoons of olive oil.

Sear the pork tenderloin on all sides until golden brown, about 2-3 minutes per side.

Transfer the skillet with the pork to the preheated oven and roast for 15-20 minutes, or until the internal temperature reaches 145°F (63°C). Remove from the oven and let the pork rest on a cutting board, covered loosely with foil.

Lower the heat and stir in 1 cup of heavy cream and 4 ounces of crumbled Stilton cheese. Stir until the cheese is melted and the sauce is smooth. Add 1 teaspoon of chopped fresh rosemary and adjust seasoning with salt and pepper if needed.
