Season the pork chops on both sides with salt, black pepper, and paprika. Set aside.
Peel the potatoes and slice them thinly (about 1/8 inch thick). Use a mandoline for consistency if available. Thinly slice the onion and mince the garlic.
In a large skillet, heat 1 tablespoon of olive oil and 1 tablespoon of butter over medium-high heat. Sear the pork chops for 2-3 minutes on each side until browned. Remove them from the skillet and set aside.
