Peel and slice the ripe plantains into thin rounds.
Boil the plantain slices in water until soft, about 8β10 minutes. Drain and let them cool slightly before blending.
Puree the boiled plantains into a smooth paste using a blender or food processor. Set aside.
Heat 2 tablespoons of ghee in a heavy-bottomed pan over medium heat. Add cashews and fry until golden brown. Add raisins and fry until they puff up. Remove and set aside.
In the same pan, add the remaining 2 tablespoons of ghee and the plantain paste. Cook on medium heat, stirring constantly to prevent sticking.
After 5 minutes, add sugar and mix well. The mixture will thin out slightly as the sugar melts. Keep stirring to avoid burning.
Pour in the milk and continue stirring. Cook until the mixture thickens and begins to leave the sides of the pan, about 10 minutes.
Add the cardamom powder and mix well. Cook for another 2β3 minutes until the halwa has a glossy texture.
Turn off the heat and garnish with the fried cashews and raisins. Mix gently to combine.
Serve warm or let it cool and refrigerate. Enjoy this rich and flavorful Plantain Halwa as a dessert or a sweet treat!
