📝 Instructions

9 steps
1

Bring 4 liters of water to a boil in a large pot. Add 1 tablespoon of salt and the spaghetti. Cook according to the package instructions until the pasta is al dente. Reserve 1 cup of pasta water before draining.

2

While the pasta is cooking, heat 2 tablespoons of olive oil in a large skillet over medium heat.

3

Mince the garlic cloves and sauté them in the olive oil until fragrant, about 1 minute.

4

Add 3 tablespoons of tomato paste to the skillet and cook, stirring constantly, for 2–3 minutes to deepen the flavor.

5

Lower the heat and slowly pour in 1 cup of heavy cream, whisking constantly to create a smooth sauce.

6

Stir in 1 cup of grated Parmesan cheese until fully melted and combined. If the sauce is too thick, add a bit of the reserved pasta water, 1 tablespoon at a time, until the desired consistency is reached.

7

Season the sauce with 0.5 teaspoons of red pepper flakes, 0.5 teaspoons of black pepper, and additional salt to taste.

8

Add the cooked and drained spaghetti to the skillet, tossing until the noodles are fully coated in the pink sauce.

9

Serve the pink spaghetti with fresh basil leaves garnished on top and an extra sprinkle of Parmesan if desired.
