Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 5-6 minutes per side, or until browned and fully cooked (internal temperature should reach 165°F). Remove the chicken from the skillet and set aside.
In the same skillet, heat the remaining 1 tablespoon of olive oil and 1 tablespoon of butter over medium heat. Add the pierogis in a single layer and cook until golden brown and crisp on both sides, about 3-4 minutes per side. Remove the pierogis from the skillet and set aside.
