📝 Instructions

7 steps
1

Bring a large pot of salted water to a boil. Cook the penne pasta according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

2

Trim the tough ends from the asparagus and cut the spears into 2-inch pieces. Set aside.

3

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Season the salmon fillet with a pinch of salt and pepper, then cook it skin-side down for 3-4 minutes on each side or until it flakes easily with a fork. Remove from the skillet and set aside to cool slightly. Once cooled, flake the salmon into chunks, discarding the skin.

4

In the same skillet, add the remaining tablespoon of olive oil. Sauté the minced garlic for 30 seconds until fragrant, then add the asparagus and cook for 4-5 minutes until tender-crisp.

5

Lower the heat to medium-low and pour in the heavy cream. Stir in the lemon zest, lemon juice, and Parmesan cheese, allowing the cheese to melt into the sauce. If the sauce is too thick, add a splash of the reserved pasta water to reach the desired consistency.

6

Gently fold the flaked salmon into the sauce, then add the cooked penne. Toss everything together, ensuring the pasta is well coated. Season with additional salt and pepper to taste.

7

Serve hot, garnished with fresh parsley if desired. Enjoy your Penne with Salmon and Asparagus!
