Line an 8x8-inch baking dish with parchment paper, leaving some overhang for easy removal. Set aside.
In a medium saucepan, combine honey, peanut butter, and brown sugar. Heat over medium-low heat, stirring frequently, until the mixture is smooth and the sugar has dissolved, about 3-4 minutes.
Remove the saucepan from heat and stir in the vanilla extract and salt.
In a large mixing bowl, combine rolled oats and (optional) chopped peanuts. Pour the peanut butter mixture over the oats and mix thoroughly until evenly coated.
