- 1.5 cups all-purpose flour
- 1 teaspoon baking soda
- 0.25 teaspoon salt
- 0.5 cup unsalted butter, softened
- 0.5 cup creamy peanut butter
- 0.5 cup granulated sugar
- 0.5 cup light brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 24 pieces Hershey's Kisses (unwrapped)
- 0.25 cup granulated sugar (for rolling)
Instructions
Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper or a silicone baking mat.
In a medium bowl, whisk together the all-purpose flour, baking soda, and salt. Set aside.
In a large mixing bowl, beat the softened butter, peanut butter, granulated sugar, and light brown sugar together using an electric mixer on medium speed until the mixture is light and fluffy, about 2-3 minutes.
Add the egg and vanilla extract to the butter mixture and beat until combined.
Gradually add the dry ingredients to the wet ingredients, mixing on low speed until a dough forms.
Scoop out 1-inch portions of dough and roll them into balls (roughly 1 tablespoon of dough each).
Roll each ball in the granulated sugar reserved for rolling to coat.
Place the dough balls on the prepared baking sheets approximately 2 inches apart.
Bake in the preheated oven for 8-10 minutes, or until the cookies are lightly golden and slightly puffed but not browned.
While the cookies are baking, unwrap all the Hershey's Kisses and set them aside.
Remove the cookies from the oven and immediately press a Hershey's Kiss gently into the center of each cookie. The cookies will crack slightly around the edges – this is normal!
Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
