Peel and cut the potatoes into chunks. Place them in a large pot and cover with cold water. Add 1 tsp of salt and bring the water to a boil. Reduce heat and simmer for 15-20 minutes, or until the potatoes are fork-tender.

In a small bowl, beat the egg and brush it over the top layer of mashed potatoes. Sprinkle the grated Parmesan cheese evenly over the top.
