Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.
In a large skillet over medium heat, toast the pine nuts until golden and fragrant, about 2-3 minutes. Remove from skillet and set aside.
In the same skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced pancetta and cook until crispy, about 4-5 minutes. Remove the pancetta with a slotted spoon and set aside, leaving the rendered fat in the skillet.
