Bring a large pot of salted water to a rolling boil. Add the orecchiette pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the spicy Italian sausage and break it into small pieces with a wooden spoon. Cook until browned and fully cooked through, about 5-7 minutes. Remove the sausage with a slotted spoon and set aside on a plate.
