Preheat your oven to 180°C (350°F) and line two baking trays with parchment paper.
In a large mixing bowl, combine the all-purpose flour and salt.
Dice the unsalted butter into small cubes and add it to the flour mixture. Using your fingers or a pastry cutter, work the butter into the flour until the mixture resembles coarse crumbs.
Stir in the sour cream and egg yolks. Knead the mixture lightly by hand until it forms a smooth dough. Do not overwork the dough.
