Thinly slice the beef sirloin into bite-sized strips. Set aside.

In a bowl, whisk together soy sauce, oyster sauce, sesame oil, rice vinegar, brown sugar, and cornstarch. This will be your marinade and sauce base.

Pour half of the marinade over the beef slices, reserving the other half for later. Mix well and let the beef marinate for 15 minutes.
