Ingredients

  • 2 teaspoons Olive oil
  • 4 medium Yellow onions
  • 2 medium Garlic cloves
  • 6 cups Low-sodium beef broth
  • 2 teaspoons Fresh thyme leaves
  • 1 Bay leaf
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 4 Whole-grain bread slices
  • 0.5 cups Reduced-fat shredded cheese (such as Swiss or Gruyere)
  • 1 teaspoon Dried parsley
  • 0.5 teaspoons Garlic powder

Directions

Step 1

Heat the olive oil in a large soup pot over medium heat.

Step 2

Peel and thinly slice the yellow onions. Add them to the pot and cook, stirring occasionally, until softened and golden, about 25-30 minutes.

Step 3

Mince the garlic cloves and add them to the pot. Cook for an additional 2-3 minutes, stirring, until fragrant.

Step 4

Pour in the low-sodium beef broth and stir in the fresh thyme leaves and bay leaf. Bring the soup to a boil, then reduce to a simmer. Cover and let it cook for 15-20 minutes.

Step 5

Season the soup with salt and black pepper to taste. Remove and discard the bay leaf before serving.

Step 6

While the soup simmers, preheat your oven broiler. Place the slices of whole-grain bread on a baking sheet.

Step 7

In a small bowl, mix the reduced-fat shredded cheese with dried parsley and garlic powder. Evenly divide the cheese mixture onto the tops of the bread slices.

Step 8

Broil the bread slices for 2-3 minutes, or until the cheese is melted and slightly golden. Keep an eye on them to avoid burning.

Step 9

To serve, ladle the onion soup into bowls and place one herbed cheese toast on top of each serving. Enjoy immediately.
