In a small saucepan, heat the milk and butter over medium heat until the butter is melted and the mixture is warm (about 110°F/43°C). Remove from heat and let cool slightly.
In a large mixing bowl, combine 2 cups of flour, granulated sugar, salt, and active dry yeast.
Gradually add the warm milk mixture to the dry ingredients while stirring. Add the eggs one at a time, mixing well after each addition.
Gradually incorporate the remaining flour, 1/2 cup at a time, until a soft dough forms. Knead the dough on a floured surface for 8-10 minutes until smooth and elastic.
Place the dough in a lightly greased bowl, cover with a clean kitchen towel, and let rise in a warm place for 1 hour, or until doubled in size.
While the dough is rising, prepare the onion filling. Finely dice the yellow onion. Heat olive oil in a skillet over medium heat and sauté the onion until golden brown and fragrant, about 5-7 minutes. Remove from heat and let cool.
Punch down the risen dough and divide it into 12 equal pieces. Flatten each piece into a small disk, place 1-2 teaspoons of the sautéed onion in the center, and fold the dough around the filling to form a ball. Pinch the edges to seal.
Place the filled rolls on a greased or parchment-lined baking sheet, leaving about 2 inches of space between each roll. Cover with a kitchen towel and let rise for 30 minutes.
Preheat the oven to 375°F (190°C). Prepare the egg wash by whisking 1 egg with 1 tablespoon of water. Brush the egg wash over the tops of the rolls and sprinkle with sesame seeds, if desired.
Bake the rolls in the preheated oven for 18-20 minutes, or until golden brown. Remove from the oven and cool slightly before serving.
