📝 Instructions

10 steps
1

Bring a large pot of salted water to a boil. Cook the linguine according to package instructions until al dente. Reserve 1/2 cup of pasta water, drain, and set aside.

2

While the pasta cooks, pat the shrimp dry with a paper towel. Toss them in a bowl with the Old Bay seasoning and set aside.

3

In a large skillet over medium heat, melt 2 tablespoons of unsalted butter with 2 tablespoons of olive oil.

4

Add the minced garlic and red pepper flakes to the skillet, sautéing for about 1 minute until fragrant, being careful not to burn the garlic.

5

Increase the heat to medium-high and add the seasoned shrimp to the skillet in a single layer. Cook for 2-3 minutes per side, or until pink and fully cooked. Remove the shrimp from the skillet and set aside.

6

Deglaze the skillet by adding the dry white wine and lemon juice, scraping up any browned bits from the bottom of the pan. Let the sauce simmer for 2-3 minutes, reducing slightly.

7

Lower the heat to medium and whisk in the remaining 2 tablespoons of butter until the sauce is smooth and glossy.

8

Return the cooked shrimp to the skillet, tossing to coat them in the sauce. Add the cooked pasta to the skillet, along with 1-2 tablespoons of reserved pasta water, and toss everything together. Adjust with more pasta water if needed to loosen the sauce.

9

Stir in the chopped parsley and season with salt and freshly ground black pepper to taste.

10

Serve the shrimp scampi hot, optionally garnished with grated Parmesan cheese and extra parsley. Enjoy!
