1. Prepare the bitter melon: Slice the bitter melon lengthwise, remove the seeds and pith with a spoon, and cut into thin half-moon slices. Place the slices in a bowl, sprinkle with 1 teaspoon of salt, and rub gently to reduce bitterness. Let sit for 10 minutes, then rinse thoroughly under cold water and pat dry with paper towels.
