📝 Instructions

12 steps
1

Line a large baking sheet with parchment paper and set it aside.

2

In a heavy-bottomed saucepan over medium heat, combine the granulated sugar, unsalted butter, and honey.

3

Stir the mixture with a heatproof spatula until the sugar dissolves and the butter melts, about 5 minutes.

4

Increase the heat to medium-high and allow the mixture to come to a boil. Continue cooking, stirring occasionally, until the mixture turns a deep amber color and reaches 145°C (293°F) on a candy thermometer. This should take about 10–12 minutes.

5

Immediately remove the saucepan from the heat and quickly stir in the roasted almonds and hazelnuts.

6

Carefully pour the hot mixture onto the prepared baking sheet. Use the back of a spoon or a spatula to spread it into an even layer, about ½ cm thick. Allow it to cool completely, about 1 hour.

7

While the candy cools, melt the dark chocolate in a heatproof bowl set over a pot of simmering water (double boiler method). Alternatively, microwave in 20-second increments, stirring after each, until smooth.

8

Once the candy has hardened, break it into irregular pieces using your hands or a knife.

9

Dip one side of each candy piece into the melted chocolate or drizzle the chocolate evenly over the top. Place the chocolate-coated or drizzled candy pieces back onto the parchment-lined baking sheet.

10

While the chocolate is still wet, sprinkle with sea salt if desired, for an added flavor twist.

11

Allow the chocolate to set at room temperature or transfer to the fridge for about 20–30 minutes until fully hardened.

12

Store the Nut Rocca Candy in an airtight container at room temperature for up to 2 weeks or in the refrigerator for longer freshness.
