In a heavy-bottomed saucepan over medium heat, combine the granulated sugar, unsalted butter, and honey.
Stir the mixture with a heatproof spatula until the sugar dissolves and the butter melts, about 5 minutes.
Increase the heat to medium-high and allow the mixture to come to a boil. Continue cooking, stirring occasionally, until the mixture turns a deep amber color and reaches 145°C (293°F) on a candy thermometer. This should take about 10–12 minutes.
