Ingredients

  • 4 slices Thick slices of bread (sourdough or country loaf preferred)
  • 2 tablespoons Unsalted butter
  • 1 tablespoon Olive oil
  • 200 grams White or cremini mushrooms, thinly sliced
  • 2 cloves Garlic, minced
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper, freshly ground
  • 3 tablespoons Cream or whole milk
  • 6 units Large eggs
  • 2 tablespoons Crumbled feta or grated Parmesan (optional)
  • 6 strips Bacon strips
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Preheat a large skillet over medium heat and cook the bacon strips until crispy. Drain on paper towels and set aside. Reserve 1 tablespoon of bacon fat.

Step 2

In the same skillet, add olive oil and heat over medium-high heat. Add the sliced mushrooms and sauté until golden brown, about 5-7 minutes. Add the minced garlic and cook for an additional 1 minute. Season with salt and black pepper. Remove from heat and set aside.
