Ingredients

  • 1 cup dried hibiscus flowers
  • 6 cups water
  • 1 cup fresh raspberries
  • 1 cup fresh mint leaves
  • 0.33 cup granulated sugar
  • 0.25 cup fresh lime juice
  • 2 cups ice cubes
  • 4 sprigs extra mint sprigs
  • 8 pieces fresh raspberries (for garnish)

Directions

Step 1

In a medium saucepan, bring 2 cups of water to a gentle boil. Add the dried hibiscus flowers, stir, and remove from heat. Cover and let steep for 10 minutes.

Step 2

While the hibiscus steeps, place the fresh raspberries, fresh mint leaves, and granulated sugar in a large pitcher or mixing bowl.

Step 3

Using a muddler or the back of a spoon, gently crush the raspberries and mint leaves to release their juices and oils. Do not over-mash them into a paste.

Strain the hibiscus tea through a fine mesh sieve or cheesecloth into the pitcher with the muddled raspberries and mint, discarding the hibiscus flowers.

Add the lime juice and 4 cups of cold water to the pitcher. Stir well to combine all ingredients.

Taste the agua fresca, and adjust sweetness with additional sugar if desired. Stir to dissolve any added sugar.
