Bring 2 liters of water to a boil in a large pot. Add a pinch of salt to the water.
Add the shelled broad beans to the boiling water and cook for 3-5 minutes until tender and bright green.
Prepare a bowl with ice water (6 ice cubes and cold water) to create an ice bath.
Using a slotted spoon, transfer the cooked broad beans to the ice bath immediately to stop the cooking process and preserve their color.
Once the beans have cooled, drain them and remove the tough outer skins by gently squeezing each bean until it pops out of its skin. Discard the skins.
In a blender or food processor, combine the peeled broad beans, minced garlic, fresh mint leaves, extra virgin olive oil, lemon juice, salt, and pepper.
