Preheat your oven to 400°F (200°C).
Wash and dry the baby potatoes. Place them on a baking sheet, drizzle with olive oil, and sprinkle with salt and black pepper.
Roast the potatoes in the preheated oven for 25–30 minutes, or until tender when pierced with a fork. Remove them from the oven and let them cool slightly until they are easy to handle.
