Press the tofu: Wrap the tofu block in a clean kitchen towel and place a heavy object (such as a skillet or cookbook) on top. Let it press for 15 minutes to remove excess moisture. Then cut the tofu into 1-inch cubes.

In a small bowl, whisk together the soy sauce, honey or maple syrup, rice vinegar, grated ginger, and minced garlic to create the marinade.

Place the tofu cubes in a shallow dish or a resealable plastic bag and pour the marinade over the tofu. Let the tofu marinate for 15 minutes, turning occasionally to ensure even coating.

In a separate bowl, mix the cornstarch and water until smooth to create a slurry. Set aside.

Heat 1 tablespoon of sesame oil in a large non-stick skillet or wok over medium-high heat. Remove the tofu from the marinade (reserve the marinade) and add the tofu to the pan. Add the reserved marinade and pineapple chunks to the skillet. Bring it to a simmer. Stir in the cornstarch slurry and cook for 1-2 minutes until the sauce thickens.

Return the tofu to the skillet and toss gently to coat it in the sauce. Cook for 2 more minutes until everything is heated through.
